Now we’re all talking about the entrepreneurial world, but what will make us more engulfed in the industry other than talking with an entrepreneur themselves? I work at a a family owned greek restaurant called Koble, located in uptown Westerville and under ownership of Ashleigh and Ilias Strovalidis. Ilias, native from Greece, brought his talents to the kitchen as his wife brings the business. Let’s dive into see what Ash has to say about business owning and proprieting…
How long have you been in the restaurant business?
“All my life I’ve worked in different restaurants I’ve just climbed the ladder to own this.”
What does your role as part owner entail?
“I am the general manager so I keep tabs on stock, orders, I manage employees, conduct payroll and help around just as my employees do”
What made you want to be an entrepreneur?
“I loved the idea of being my own boss and being able to hopefully someday grow enough to create my own schedule”
What’s most challenging with owning a business?
“Being able to handle all things at once, you have to be careful not to spread yourself too thin”
What’s the most rewarding thing about business owning?
“Watching people love what you sell to them and being able to build so many relationships with your regulars and just being able to get involved with everyone in the uptown Westerville community”
